The Italian word "Giardiniera" loosely translated means "from the garden". In Italy, the giardiniera consists of larger pieces of vegetables that have been fermented in brine and packed with some vinegar to increase acidity. The vegetables look great on antipasto platters and can be made from any variety of vegetables you have on hand.
