Ahi is a decadent fish fit for a special occasion. This ahi steak has a herby pesto hollandaise which is broiled quickly with artichoke hearts for a very elegant presentation. The hollandaise is made with olive oil in the pesto not butter so the saturated fats are greatly reduced.
