This is an exceptionally high vibe pizza that I made on the black lava beaches in Kona Hawaii. This pizza has so much to do with Hawaii and the beautiful things they have there. Lomi Lomi is a Hawaiian energy massage. Lomi Lomi means to rub and soothe as the paws of a contented cat. It is sacred to Hawaiians and the massage increases the flow of energy through your body with its long sweeping strokes that traverse the body. For this pizza, I used fresh Mahi Mahi which is the Hawaiian name for the dolphin fish which is not the marine mammal we see at the zoos, but a colorful bluefish also known as the Dorado. This fish was given its name of dolphin fish by sailors who often saw it swimming ahead of the boats as dolphins do. Mahi Mahi is a delicious fish with firm white meat. In this recipe, I massage thin slices of raw fresh mahi-mahi with fresh lime juice, habanero chilies, and a Hawaiian sea salt called Red Alaea Clay Salt. The unrefined sea salt is mixed with an iron oxide-rich volcanic clay from the Hawaiian islands. The salt is delicious and a very healthy mineral-rich salt. The lime juice and salt cure the Mahi Mahi as it is gently massaged into the slices giving it a firm texture as it denatures or cooks the protein. Fresh Pineapple is glazed with Kiawe White honey which is found only in Hawaii. The white honey is produced by bees that pollinate the Kiawe trees Hawaii.
