Cucumber Ketchup with Cornmeal Coriander Crusted Walleye & Coconut Rice Ketchup has been around since as early as 300 BC. Its taken many forms, in fact almost every vegetable or fruit has been preserved into the condiment we call Ketchup. This Cucumber Ketchup is delicious, served with fish, poultry, eggs, potatoes, or anything. This recipe uses walleye because it's walleye season now. Cornmeal is combined with coriander and yogurt to make a healthy spicy tangy coating for the fish. I love this served with coconut rice. -Makes 4 Cups Ketchup and 4 Servings of Walleye
