I make this with my own gluten-free flour mix. I do not like to use commercial gluten-free flour mixes which usually contain gums and other ingredients that I do not like to use. When you mix the batter allow a 30-minute rest for hydration of the flours this will improve the product. Gluten-free flours require this hydration period to perform at their best. -15 Minutes Prep -30 Minutes Hydration -20 Minutes Cook Time
