This cake is so amazing. Gluten-Free flours are not all the same. Make my recipe for this which is included. The result is a tender cake with a moist crumb that tricks people into thinking it's not gluten-free, but it is. Sweetened with amazing antioxidant, zero-calorie, monk fruit, this cake is complemented by applesauce and fresh carrots and raisins. Yacon syrup, combined with coconut sugar is a great substitute for brown sugar. Both have vital nutrients and add great taste with very few calories added.
